How to Acquire the Perfect Egg Free Bumble Bee Cupcake?

What do we need for making this cupcake?

This cake is replete with banana, pineapple, fluffy-moist sponge. Here, we are going to present the recipe for 24 cupcakes. The preparation time of this cupcake is 1 hour, and the cooking time required is 20 mins. This is perfect for any special occasion. The cake flour has to be prepared in such a manner that a light and fluffy texture can be obtained. The pineapple, apple sauce, and bananas provide the moisture and flavours to cake. The ingredients required are in 4 parts, and the icing ingredients are separate.

1st part- 1 cup of soft butter, 2 cups of white sugar, unsweetened applesauce ½ cup, ¼ cup of plain yoghurt, 2 teaspoons of vanilla extract, apple cider vinegar 1 teaspoon.

2nd part- ½ cup of drained and crushed pineapple, mashed bananas 2 cups.

3rd part- 1 teaspoon of baking soda, self-rising flour 3 cups, ½ teaspoon baking powder, ½ teaspoon salt, 1 teaspoon of grounded cinnamon.

4th part- flaked unsweetened coconut 1 cup, chopped and toasted pecans 1 and ¾ cups.
Ingredients for icing- ½ cup softened butter, 1 package of cream cheese which comprises of 8 ounces, 3+3/4 cups of confectioned sugar, 1 teaspoon of vanilla extract.

How to prepare?

Preheat the oven for 15 minutes before starting. Apply paper liners on the 12 cup muffin tins. After the overheating has been done, the pecans have to be placed on the cookie sheet and toasted on the oven for 5-7 minutes. In between they should be stirred so that the pecans don’t burn. After that, remove the pecans and allow it to cool outside. Chop the nuts coarsely and keep it aside.

Use a smaller bowl for the mashed bananas and crushed pineapples. A tablespoon of milk or water should be added to the mashed mixture. Take a bowl of medium size for the part 3 ingredients and stir them, before setting aside.

Take a large bowl this time and us an electric beater to mix the butter and sugar to attain a creamy texture. Vanilla extract, yoghurt, vinegar and apple sauce has to be added to it and stirred well. After beating this mixture for 2 mins, the mixture will have a curdled look. Next add the fruit and flour mixture along with the pecans. Stir the batter well and pour them in the muffin cup. Bake it for 20-23 mins. Do the icing perfectly and your cake is ready to serve!
